Mutabbaq or Murtabak is a stuffed Arabic bread, also known as "Fatatari" in some parts of Middle East. Murtabak originated in Sub-Continent by Turks during the rule of Sultan Qutb-ud-din-Aibak, a Turkish descendant. For murtabak, mince and egg is stuffed in rolledout dough, wrapped and fried.
Mutabbaq Ingredients
- For Dough:
- All purpose flour 2 cups
- Salt 1 tsp
- Milk as required
- For Frying:
- Egg 1 for each murtabak
- Tomatoes (chopped) as required
- Allspice powder as required
- Spring onion (finely chopped) as required
- For Mince:
- Mince 250 gm
- Oil 2 tbsp
- Ginger and garlic paste 1 tsp
- Salt 1 tsp
- Chinese salt 1/2 tsp
- Black pepper 1/2 tsp
- Coriander leaves as required
- Mint leaves as required
- Green chillies as required
Mutabbaq Cooking Directions

For Mince: Heat oil and add mince, salt, Chinese salt, black pepper, ginger and garlic paste.

Then cook until water dries.

Sprinkle coriander leaves, mint and green chillies.

For Dough: Kneed flour with milk until the dough is smooth, divide into 30 equal balls.

Apply oil on top and leave aside for 15 minutes.

Apply oil on a marble top or a smooth surface and rollout one ball of the dough.

For Frying: Spread prepared mince, sprinkle allspice, chopped tomatoes and spring onions.

Break an egg on top and fold sides so that a square is formed.

Fry on medium heat till golden on both sides.
