Moong Lentil with Spinach

Split green lentils are boiled with seasoning and spinach. Lentils are then mashed well and topped off with garlic, mustard seeds and green chillies tempering.
Moong Lentil with SpinachIngredients
- Split green lentils (soaked 1/2 an hour) 1 cup
- Turmeric powder 1/2 tsp
- Chili powder 1/2 tsp
- Salt 1 tsp
- Chopped spinach 1 cup
- Small bunch of soya 1
- For tempering:
- Ghee or butter 4 tbsp
- Garlic cloves finely chopped 2
- Mustard seeds 1 tsp
- Green chilli slit lengthwise 2
Moong Lentil with Spinach Cooking Directions

Drain the lentils and put in a saucepan with turmeric, salt and chilli powder and enough water to boil.

When the water boils add the spinach.

Partly cover the pan, reduce the heat and let it simmer for an hour or until the lentils get tender.

Mash the lentils with a whisk and add the tempering.

Serve with chapatis or plain rice.
