A delicious egg curry, a savior of the times when your completely out of easy yummy lunch ideas and when your just don't have more than half an hour on your hands.
Masala Egg Ring Ingredients
- Eggs 6
- Big tomato (chopped) 1
- Onion (sliced) 1
- All spice 1/2 tsp
- Sugar 1/2 tsp
- Butter 2, 1/2 tbsp
- Salt to taste
- Chopped coriander leaves
- Grind together:
- Big onion 1
- Cloves of garlic 4
- Ginger 1/2" piece
- Green chillies 2
- Cumin seeds 1 tsp
- Coriander seeds 1, 1/2 tsp
- Small coconut 1
- Turmeric powder 1/2 tsp
- Chilli powder 1/2 tsp
- Poppy seeds 1 tsp
- Cinnamon 1 stick
- Cardamoms 2
Masala Egg Ring Cooking Directions

Heat oil in a pan and fry the sliced onion till golden brown.

Add the ground spices, chopped tomatoes, sugar and salt to taste.

Fry till the oil separates.

Make into four portions and keep aside one portion.

In the 3/4 fried spices, add 1 cup water and boil till almost ready.

Break the eggs gently on top and arrange on the curry.

Add butter on top of the eggs and cover and cook on a low flame.

When the eggs are set, sprinkle 1/4 of the spices and cook for a few minutes.

Remove and garnish with chopped coriander and serve.
