Tri-Coloured Chicken Seekh with Ajwaini Gravy - Want a twist and innovation in your usual seekh kebabs? Then try out this one of a kind delicious recipe. Chicken seekh kebab with cheese filling served with a drizzle of carom seed gravy.
Tri-Coloured Chicken Seekh with Ajwaini Gravy Ingredients
- Chicken mince 400 gm
- Corn kernels (crushed) 1/2 cup
- Spring Onions (finely chopped) 2 stalks
- Garlic (4 cloves crushed) 8-10 cloves
- Coriander Leaves (finely chopped) 4 tbsp
- Red Chilli Flakes 1 tsp
- Salt to taste
- Coriander Powder 2 tsp
- Black Pepper powder to taste
- All spice powder 1 tsp
- Eggs (boiled, shelled and grated) 2
- Paneer (mashed) 200 gm
- Sugar 1/2 tsp
- Oil 3 tbsp
- Butter 2 tbsp
- 2 medium: Onions (diced) 2 medium
- Dry fenugreek leaves 1 tbsp
- Green Chillies 3
- Tomatoes (diced) 3 medium
- Carom seeds 2 tbsp
Tri-Coloured Chicken Seekh with Ajwaini Gravy Cooking Directions

For the Kebab: Mix minced chicken, corn, spring onions, crushed garlic, green coriander, red chilli flakes, salt, coriander powder, black pepper powder and all spice.

Also mix in grated boiled eggs.

For the Paneer: Mix the paneer with crushed sugar, coriander powder and black pepper powder.

Put paneer mixture on a Skewer and cover with chicken mince mixture.

Heat a griddle pan and grill skewers turning regularly and basting with oil.

When done, cool and cut into 3 long pieces of different sizes.

For the Gravy: Heat butter, add onions, dry fenugreek leaves and cook till onions become translucent.

Add chilles, garlic and tomatoes.

Cook till oil starts to separate.

Cool and grind to a smooth gravy.

Return gravy to pan, mix in carom seeds (rubbed between palms) and cook for 5 minutes.

Add pepper, salt, a pinch of all spice and cook for 2 more minutes.

To serve, spoon gravy in a bowl and place the kebab pieces standing.

Serve hot with basil rice.
