Put the ribs in a pot, add milk, black cardamom, cinnamon sticks, cloves, bay leaves, garam masala, asafoetida, and salt.
Kabargah (Fried Ribs) Ingredients
- Lamb ribs(3inchx5inch pieces) 1 kg
- Milk 2 1/2 cups
- Black cardamom (badi elaichi) 3
- Cinnamon (dalchini), 1" sticks 2
- Cloves (laung) 4
- Bay leaves (tej patta) 2
- Garam masala 1 tsp
- Asafoetida (hing) a pinch
- Salt 2 tsp
- Ghee 1 1/2 cups
- Yoghurt (dahi) 1/2 cup
- Red chilli powder 1/2 tsp
- Silver leaves (varq) 5-6
Kabargah (Fried Ribs) Cooking Directions

Put the ribs in a pot, add milk, black cardamom, cinnamon sticks, cloves, bay leaves, garam masala, asafoetida, and salt.

Cook till the milk gets absorbed.

Remove from heat, and transfer the ribs to a large plate.

Keep aside.Heat the ghee.

Meanwhile, whisk together the yoghurt, red chilli powder, and a little salt until smooth in consistency.

Dip each rib into the yoghurt and fry to a rich brown colour.

Drain excess oil and transfer to a serving dish.

Garnish with silver leaves and serve hot, as a snack or as part of the main course.
