Lemon Souffle - Zesty lemon souffle is made in a freshly prepared homemade custard. The light and fluffy lemon souffle in served on top of strawberry jelly. You can set this dessert in individual glasses for a more attractive presentation.
Lemon Souffle Ingredients
- Eggs (separated) 3
- Gelatine powder (dissolve in 1/4 cup water) 3 tsp
- Sugar 8 tbsp
- Lemon juice 3 tbsp
- Flour (maida) 1 tbsp
- Milk 2 cup
- Fresh cream 8 oz, whipped with 2 oz of castor sugar
- Strawberry jelly (made as instructions on pack) 1 packet
Lemon Souffle Cooking Directions

Dissolve gelatine powder in water and add in lemon juice and keep aside.

Take milk and add in 4 oz sugar, flour and 3 egg yolks.

Cook on low heat stirring continuously till it gets slightly thick.

Cool the mixture and add the dissolved gelatine mixture.

Beat egg whites till stiff and lightly fold in the custard.

Beat cream with the 2 oz of castor sugar till fluffy and thick.

Fold this in custard, add few drops of yellow food color.

Put this mixture on top of set jelly.

Garnish with swirls of cream.
