Vegetable Tihari - Tihari is an innovation of biryani that originated in Calcutta during the British rule. Try out this very spicy recipe of vegetable tihari prepared with mix vegetables.
Vegetable Tihari Ingredients
- Peas 1 cup
- Potatoes 2 (cut into cubes)
- Carrots 2
- Tomatoes 2 (sliced)
- Rice 1/2 kg
- Yogurt 1/2 cup
- Brown onion 1/2 cup
- Oil 3/4 cup
- Garlic paste 1 tsp (heaped)
- Chili powder 1 tsp (heaped)
- Whole allspice 1 tbsp
- Turmeric 1/2 tsp
- Salt 2 tsp
Vegetable Tihari Cooking Directions

Heat oil in a pan, add whole allspice, brown onion and garlic paste with water, fry well.

Add chili powder, salt, turmeric and yogurt, fry well.

Add potato cubes, carrots cubes and peas, fry for 10 minutes.

Add 1 cup water, cover and cook till vegetables are nearly done.

Add soaked rice with 2 cups water, cover and cook till water nearly dries.

Add green chilies and sliced tomatoes on top, simmer till done.

Serve with bondi ka raita.
