Cold Chicken Salad - A great filling chicken salad. Its cold temperature makes it a great choice for a starter/appetizer in summer. The cooling cucumber nicely lifts up the chicken and apple efficiently and naturally sweetens the chill of the cold salad.
Cold Chicken Salad Ingredients
Boneless chicken fillets (diced, seasoned and cooked) 1/2 kg
Apples (cubed) 1 cup
Cucumber (cubed) 1/2 cup
Raisins 12-14
Mix nuts (chopped) 1/2 cup
Mustard powder 1 tsp
White vinegar 1 tsp
Black pepper (freshly grounded) 1/2 tsp
Paprika 1/2 tsp
Fresh coriander leave (finely chopped) as required
Mayonnaise 1 cup
Olive oil 2 tbsp
Salt to taste
Cold Chicken Salad Cooking Directions
Combine the diced chicken with remaining ingredients in a large bowl.
Toss well and add in mayonnaise and salt according to your taste.
Refrigerate for at least 2-3 hours before serving.
