Fish Salad

Fish is marinated in simple seasoning and grilled. It is served with freshly prepared Red pepper mayonnaise, made of Dijon mustard and roasted red peppers. Fish and red pepper mayonnaise is served on a bed of freshly cut salad.
Fish Salad Ingredients
- Fish fillet 1
- Salt and pepper to taste
- Lemon juice to taste
- Olive oil to taste
- For red pepper mayonnaise:
- Egg yolks 2 large
- Dijon mustard 1 tbsp
- Olive oil 250 ml
- Balsamic vinegar 2 tbsp
- Sugar 1 tsp
- Lemon juice 1 tbsp
- Red pepper, roasted 2
Fish Salad Cooking Directions

Marinate fish in salt, pepper and lemon juice for 3-4 hours.

Grill till done and golden brown, basting with oil.

To prepare red pepper mayonnaise: In a food processor, blend yolks until thickened.

Add mustard.

With food processor still running, add oil in a steady stream until mixture thickens and emulsifies.

Add vinegar, sugar, salt and freshly-ground pepper to taste, lemon juice and 1 tbsp boiling water to set it.

Process red pepper until smooth and fold into mayonnaise.

Store in refrigerator in a screw-top jar until required.

Make slits on the fish and pour mayonnaise over it.

Serve warm with a fresh salad.
