Matbucha - Matbucha (Mott-Boo-Chah) is a Turkish term meaning "cooked salad". It is a cooked tomato and bell peppers salad that is popular throughout the Middle East. Serve it as a appetizer with bread, side dish or just a salad. Matbucha works great with fish. Recipe by Chef Munawar.
Matbucha Ingredients
- Ripe Tomatoes 1/2 kg
- Garlic Cloves 6
- Green Bell Pepper 1 small
- Olive Oil 1/3 cup
- Paprika Or Red Chili Powder 2 tbsp
- Salt to taste
- Pepper to taste
Matbucha Cooking Directions

Dice tomatoes, bell pepper and garlic, place in sauce pan.

Now on medium heat, cook the mixture for 20 minutes, uncovered, stir frequently with wooden spoon.

When the vegetables are nice and soft, add the oil and spices, cook for another 10 minutes, keep stirring with wooden spoon.

When the mixture is well blended and most of the liquid has evaporated, the matboucha is ready, cool and store in a covered container in the refrigerator.

Serve it cold with Pita bread or toasted crackers.
