Carrot Coriander Soup

This is a fool proof recipe for carrot and coriander soup. A flavoursome vegetarian soup with ground coriander. The sweetness of the carrots is fantastic with the coriander.
Carrot Coriander Soup Ingredients
- Onion(sliced) 1 lg
- Unsalted Butter 2 tbsp
- Garlic Clove(minced) 1
- Coriander(ground) 1 tsp
- Carrots 10
- Boiled Potato 1
- Chicken Stock 5 c
- Orange Juice 1 1/4 c
- Salt 1/2 tsp
- White Pepper 1/2 tsp
- Heavy Cream(optional) 2/3 c
- Coriander Leaves 1/4 c
Carrot Coriander Soup Cooking Directions

In a saucepan, cook the onion in the butter over moderate heat, stirring until soft.

Add garlic ground coriander carrots and potato and cook, for 2 minutes.

Add the stock, orange juice and rest of seasonings and simmer 20-30 minutes or until carrots are tender.

Pour the mixture in a blender and blend it.

Take the mixture in a saucepan. Stir in the cream.

Season to taste with salt and pepper.

Ladle into warm bowls and sprinkle with coriander leaves.
