There are certain types of soup that some people love and others not so much, but pumpkin soup is different because there are so many diverse recipes for it. For example, chunky soups are great for kids and the creamy, sweet flavor of pumpkin is very appealing to them. Recipe by Cooking Expert Sharmeen.
Pumpkin Soup Ingredients
- Butter 2 tbsp
- Oil 1 tbsp
- Onion finely chopped 1 medium
- Garlic chopped finely 2 cloves
- Pumpkin chopped 3 cup
- Potatoes cubes 1,1/2 cup
- Stock 1,1/2 cup
- Nutmeg a pinch
- Salt to taste
- Black pepper to taste
- Chopped tarragon 1 tsp
- Milk 1,1/2 cup
- Lemon juice 1 tsp
Pumpkin Soup Cooking Directions

Heat oil in a cooking pot, add garlic and sauté for a minute.

Then add the chopped onions, sauté till transparent then add the butter stir well to combine.

Now add the vegetables and shut the lid and allow them to cook on low heat until tender make sure you remember to stir them occasionally to prevent sticking.

Stir in the stock, nutmeg, tarragon, salt and pepper and bring to a boil.

Leave it to simmer for 10 minutes until vegetables are completely cooked.

Allow the soup to cool and then blend into a smooth puree.

Return to the cooking pot and add the milk.

Heat slowly, check seasoning and add lemon juice.

Serve with a dollop of cream.
