Tom Yam Hot and Sour Mushroom Soup Ingredients
Vegetable stock 1 liter
Galangal or Thai ginger 2 slices
Lime leaves 3
Lemon grass 3 cm
Cherry tomatoes 150 gm
Apple concentrate 1/2 tsp
Soya sauce 2 tbsp
Lime juice 2 tbsp
Fresh chillies 2
Mushrooms (oyster or straw) 125 gm
Thai basil as required
Coriander leaves as required
Tom Yam Hot and Sour Mushroom Soup Cooking Directions
In a large saucepan, bring the stock to boil.
Add galangal, lemon grass, lime leaves, soya sauce, apple concentrate and lime juice.
Simmer for 2-3 minutes.
Adjust the taste by adding the chillies, if preferred.
Bring the stock to boil again and add the mushrooms and basil.
Stir well and garnish with fresh coriander before serving hot soup.
