Dajaj Mashori is a middle eastern recipe, whole chicken marinated with a tomato sauce and stuffed with rice and then steam baked is a wonderful entertaining dish to serve your guests.
Dajaj Mashori Ingredients
- Oil 4-5 tbsp
- Chicken (mince) 1/2 cup
- Chicken (whole) (optional with skin) 1
- Rice (boiled) 1 cup
- Almond 3 tbsp
- Raisin 3 tbsp
- Salt/black pepper to taste
- Cloves 2-3
- Black pepper (whole) 6
- White cumin seeds (Safayd zeera) 1 tsp
- Green cardamom 3-4
- Cinnamon stick 2
- Corriander powder 1/2 tsp
- Nutmeg 1 pinch
- Red chilli powder 1 tsp
- Mace 1 pinch
- Tomato puree 1 cup
- Garlic 3 cloves
- Pistachio 1 cup
Dajaj Mashori Cooking Directions

In a pan roast clove, black pepper, cumin seeds, cardamom and cinnamon.

Then grind these whole spices to make powdered garam masala.

To Make Stuffing: Heat 4-5 tbs oil in a pan, add chopped onion and saute.

Now add mince meat followed by almonds, raisins, pistachio and salt.

Let it cook for few mins then add boiled rice and mix.

After a few minutes take them off flame and put aside.

Add 1/2 tsp of the roasted powdered spices (garam masala) that was made earlier.

In a bowl, add salt, 1-2 tsp of garam masala and red chilli powder.

Also add coriander powder, mace, nutmeg and tomato paste and mix.

Rub this mixture all over the chicken properly .

Stuff the chicken with the mince and rice.

Tie the chicken legs together.

Put the chicken in roasting pan, add oil and 1 cup water in the roasting pan.

Cover the roasting pan with foil and put in the oven to bake .

Roast the chicken in a preheated oven at 250 degrees for 45 minutes until cooked.
